Ginataang Galunggong (Scad Fish in Coconut Milk)

Ginataang Galunggong

Ginataan is one of the specialties of the Bicolanos. When it comes to ginataan, my hubby cooks it perfectly. What are the ingredients for this ginataang galunggong and how he cooked it? Here it is:

1/2 kilo galunggong (scad)
1/4 cup water
1/2 cup vinegar
1 1/2 cup coconut cream
1 tablespoon minched ginger
1 onion (small size)
2 pcs. crushed garlic
2 pcs. eggplant
1 pc. siling labuyo
magic sarap
salt to taste

1. Put the clean round scad (galunggong) in pan.
2. Add water, vinegar, ginger, onion, garlic, eggplant, salt and pepper.
3. Boil for 5 minutes then add coconut cream. Stir gently so the cream would not curdle.
4. Cover the pan and lower heat. Cook for 10 minutes or until sauce thickens.

Hmmm... Yummy.. Yummy..
